👉 Crispy Lion’s Mane Chicken Nuggets (Easy Vegan Mushroom Recipe)

Golden, crunchy, and surprisingly close to real chicken — these Lion’s Mane nuggets are one of the best ways to cook this mushroom.

They’re crispy on the outside, soft and fibrous inside, and perfect for snacks, burgers, wraps, or a full plant-based meal.

🕒 Time
Prep: 10 minutes
Cook: 10 minutes
Total: 20 minutes

🧂 Ingredients
250g Lion’s Mane mushrooms
1 cup chickpea flour
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder (optional)
Salt & pepper
Water (for batter)
Oil for deep frying

🔥 Method

  1. Prepare the mushrooms
Tear Lion’s Mane into bite-sized nugget pieces. Keep the natural texture — this helps create the “chicken-like” bite.
  2. Make the batter
In a bowl, mix chickpea flour, paprika, onion powder, garlic powder, salt, and pepper.
Slowly add water until you get a thick batter (similar to pancake batter).
  3. Coat the mushrooms
Dip each piece into the batter until fully coated.
  4. Fry until golden
Heat oil to medium-high heat. Deep fry in batches for 3–5 minutes until golden brown and crispy.
  5. Season
Remove and drain on paper towel. Immediately sprinkle with salt while hot.

🍽️ Serving Ideas
Spicy aioli or garlic mayo
Hot sauce or sweet chilli
Inside burgers or wraps
With chips for a full “fake chicken nugget” meal

⭐ Chef Tip
For extra crunch, double-coat:
batter → rest 1 minute → batter again → fry.

🧠 Why Lion’s Mane Works So Well
Lion’s Mane naturally breaks into fibrous strands when cooked, giving it a texture similar to shredded chicken. This makes it perfect for fried, crispy recipes like this.
